Tomato Kimchi

Tomato Kimchi

A nod to a 9th Avenue classic, the illustrious, perennial tomato kimchi. Make this only with peak season, ripe-as-can-be, summer szn tomatoes, please. Choose fruit in varying sizes, shapes, and varietals for a more appetizing presentation. 

Serves 4

INGREDIENTS
Handful of ripe and juicy heirloom and cherry tomatoes, cut irregularly
1 shallot, thinly sliced
Some basil, torn
2 scallions, sliced on a bias or cut into 1" batons
3 large garlic cloves
3 tablespoons fish sauce
2 tablespoons Queens Cham Gireum Roasted Sesame Oil
1 tablespoon maesil
1/2 tablespoon brown rice vinegar
1/2 tablespoon Queens Gochugaru
Pinch of sugar

RECIPE
Combine the sauce ingredients, then gently toss with the tomatoes, shallot, herbs, and garlic.
