Freshly ground Gochugaru or dried red chili flakes sourced from Longer Table Farm in Sebastopol, California whom we have partnered with to grow organic, traditional Korean Hong Gochu peppers. Flavor-wise, we wanted something a little tart and pleasantly spicy for easily adding into everyday soups, sautés, dressings, and kimchi. Our Gochugaru is the first in Northern California to be made from traditional Korean peppers grown locally in rich soils, and kissed under the California sun.
Flavor notes: hot, fruity, bright, tart, sweet, spicy, lightly smoky
Creative uses: Try experimenting and folding into a sweet custard, dusting over nut-filled cookies before baking for a little heat and orangey glitter, or gently seasoning a spicy hot chocolate. A rich and creamy pasta sauce like a crowd pleasing vodka sauce would benefit from a spicier kick through Gochugaru.
