Often in Korean cooking, we warm up fresh alliums like garlic and scallions and spices like gochugaru with a neutral cooking oil to create a smokey oil and base flavor, or “gochu gireum”, that builds layers of heat and richness and gives a dish signature vibrant hue. This Gochu Gireum, or chili oil, is our ready-to-use version. We extract the pure oil from the aromatics to create a homogenous, finished seasoning ingredient that can be drizzled in during cooking or for finishing. The garlic is an extra spicy, beautiful hardneck Italian varietal called ‘Music’ from our farmer friend Jim at Fiddler’s Green Farm and the scallions are grown and harvested by Kou and his family at Herr Family Farm. We are proud to partner with Longer Table Farm to create the first Northern California grown gochugaru, which adds a wonderfully spicy and fruity kick to this chili oil. Limited release.
Flavor notes: smokey, savory, slightly sweet, warm, complex aromas
Creative uses: warm up a bit of oil in a pot and begin to cook your raw vegetables or proteins together with the oil before pouring in broth to make a classic Soon Dubu Jjigae (silken tofu stew). In its raw form, the oil can be drizzled over a plate of cut ripe fruit like nectarines, summer melon, pear, or tangy citrus topped with a little flakey sea salt for an easy and delicious snack.
