
Haemul Buchu Jeon
A crispy, crackling, barely there batter holds together a tight assemblage of sweet zucchini, onions, garlic chives, prawns, squid, and hot fresno peppers flecked throughout. It is equally as pleasurable tearing into the pancake’s golden crust as it is dipping each bite into the sweet and tangy brine of Jjangaji.

INGREDIENTS
1/4 pound prawns, poached
1/4 pound squid, poached
At least 2 heaping handfuls of garlic chives, cut into 3" pieces
1/2 zucchini, cut into batons
1/4 yellow onion, sliced
1 fresno pepper, seeded and sliced into slivers
1/4 cup Queens Buchim Garu Pancake Mix
A swirl of Queens Cham Gireum Roasted Sesame Oil
1/3 cup neutral cooking oil
RECIPE
Bring a small pot of water over high heat and poach the prawns and squid, separately. Drain and set aside to cool.
Toss the garlic chives, zucchini, onion, and fresno pepper together in a large bowl, then add the seafood, Buchim Garu, and Cham Gireum, and combine with your hands. Add a splash of water if needed to bind the batter and ingredients.
Place a 10"-12” frying pan with oil over high heat. Carefully add the mixture into the pan and use a large spoon or spatula to spread into an even layer. Cook the pancake, undisturbed, until you begin to see the edges turn golden brown. Use a spatula to slightly lift the underside of the pancake to check that a proper crust is forming. Holding the handle of the pan, gently swirl in a clockwise or counter-clockwise motion to loosen and shape the edges of the pancake to build a nice adhesive crust. Flip when a golden brown layer has formed, about 4-5 minutes.
Cook the other side in a similar fashion, though this should take a shorter amount of time to achieve. Check again for even browning. It should take 3-4 minutes for the pancake to cook through.
You will need to flip once more to showcase the pancake's "good side" (the initial layer always cook more photogenically golden brown since the oil has not yet been cooked in).
